Broccoli & Chicken Dijon
This recipe is set for 2 servings. Increase the size in order to make a large portion.
boneless skinless chicken breast
1 medium bunch should do the trick
low sodium soy sauce
Clean chicken breast
Cut chicken breast into thin strips (or use chicken tenderloins). In a bowl, coat chicken with soy sauce, then set aside. You can also marinade it for 20-30 minutes if you have time.
On medium heat, use 1 tsp of olive oil to saute broccoli, garlic until lightly browned. Remove from pan.
Add remaining olive oil to pan and stir-fry the chicken for 5-7 minutes until it is cooked through. Add chicken broth and bring to a light boil
Reduce heat, then stir in mustard until blended. Return the sauteed broccoli to skillet. Mix in evenly.
