I’m not sure about you, but the crockpot is my FAVORITE item to have in the kitchen. I use it year round to make life a bit easier for me. I think my favorite part about the crockpot is the ability to leave it…no need to watch!

The recipe is designed to be pretty quick, but if you make certain substitutions, it will require a little more of your time.

  1. Lightly layer the bottom of the crockpot with half of the peppers, onions, and garlic.
  2. Season chicken breast with sea salt & pepper, then set in the crockpot. on top of veggies.
  3. Add marinade on top of chicken.
  4. Place remaining vegetables on top of chicken.
  5. Pour low sodium broth in the pot. DO NOT pour on top of the chicken, but instead pour to the side of the pot.
  6. Set the crockpot to the cooking time/temperature you desire, and let it cook!
  7. Enjoy!!
Recipe Notes
  • If you are cooking for a family, increase the amount of all items except the broth.
  • Canned pineapple chunks can be used in placed of sliced (fresh/canned) pineapples.
